Sometimes it is mistakenly called a spatula, but spatulas
have slightly scopped blades and are usually thicker and
generally made of wood, plastic or rubber. Spatulas are great
for making chunky scrambled eggs or tossing stir-frying ingredients
in a wok.
A steel turner, on the other hand, is usually for
turning large pieces of meat, delicate fish, fluffy pancakes,
feather-light crepes and other foods that need support as
they are turned or lifted from the pan.
The flexibility of a good steel turner must be finely judged.
It should be slim and flexible enough to slide under the food without causing damage, but broad and firm enough to support the food as it is being moved in the pan.
Perforations in the blade will allow any excess fat or
oil to escape.
When choosing your steel turner, pick one
with a sturdy handle which will help insulate your hand from
the transferred heat of the pan. |

A steel turner can be bought in various sizes, angles, and with varying widths of blade. Most are for general cooking, but a handful have special uses.
Deeply angled versions work best for flipping pancakes
and crepes, but can also double up to serve slices of quiche,
flans or lasagna. A wide steel turner with large holes, known as a fish lifter, is specifically designed for removing a nicely cooked whole fish from its poaching liquid.
