Long-handled steel tongs with cupped ends are useful when grilling or barbecueing outdoors. Besides moving hot glowing coals, these are used to lift and turn steaks and chops as they can do so without piercing through the meat and hence prevent losing precious juices and moisture.
In the kitchen, these same type of steel tongs can be used over the stove for the same purpose when frying or sauteing. They can reach like heatproof fingers into sizzling pots and pans to grip small or awkwardly shaped items.
One example is the removal of individual strands or pieces of pasta from the water to test for donesness. In the dining area, long steel tongs can be used to serve pasta, noodles, or salads.
The smaller type of steel tongs are popularly used for picking up cubes of ice as they are more efficient than a spoon when ice is to be put into a glass.

For this same reason, flat-ended tongs are a better choice for this job. These type of tongs are also used for picking up dainty squares of cake or delicate fruit tarts or thin slices of cheese from dessert trays. Their shiny appearance also make for an attractive display all on their own.
When choosing your pair of steel tongs, do not bother with gimmicky extras like spring-action hinges as these are likely to break after only a short time of use.
These gimmicks can also get stuck and prove to be cumbersome
instead of extra help and your pair of tongs will end up
being thrown away or collecting dust. In this, as with all other kitchen items, the simpler the design, the better.
