Sometimes called a spider, a wire mesh steel skimmer is a shallow lightweight wire basket on a long handle that will scour bubbling oil, soup or stock.
It gathers up impurities known as scum or foam which will muddy the taste and ruin the smooth texture of these liquids. This type of steel skimmer is also good for removing certain types of food as it cooks.
| For example, it can scoop up long fritters from hot oil at just the right moment to be rolled crisp and hot in sugar.
A solid perforated disk steel skimmer can both skim liquids and remove pieces of food from their cooking liquid.
It is not as good a steel skimmer of the mesh variety for deep-frying, because its bulk lowers the oil temperature and the perforations are usually not large and/or many enough to allow the oil to drain freely from the food. |

Thus the food will be less crisp and may even be slightly soggy. As a skimmer has to be immersed in and be in constant contact of boiling liquids, steel is the best material choice for it.
A steel skimmer can be thinner yet stronger and more durable as compared to one made from plastic. It is a worthwhile investment that will prove to be a great asset in the kitchen.
