There is a huge range of steel graters and shredders in the market that are suitable for different purposes, but they can be easily broken down into two main categories.

For general kitchen chores, you have the traditional box steel graters and shredders.  These are inexpensive and each has differently sized cutters and holes on its four surfaces.  Choose one with a comfortable handle and a wide, stable base.  Some have special grippers on the bottom to keep them from sliding while you are working away.

Expensive, flat, stainless steel graters and shredders with double-edged, super-sharp blades are the next step up.  They are excellent for very fine grating of hard ingredients like fresh ginger, cinnamon sticks and chocolate.

There are coarser holes for shredding of softer ingredients, and there is usually also a single blade for shaving.  These steel graters and shredders should have long handles, non-slip feet and a guard to protect your fingers.

A mandolin with a carriage is a good buy as it will not only steady the food while you slice, but protect your fingers at the same time.

These days, there are also steel graters and shredders that come in cylindrical shapes and have a rotary handle.  They are especially good for grating Parmesan cheese and can be a life-saver if you are a novice cook.  Just load a small chunk of fresh Parmesan into the cylinder, grind directly into the recipe or onto the finished product, and watch even the worst sauce suddenly sing out with joy!
