It is useful for anyone who cooks to have a selection of differently sized and shaped forks suited to the various kitchen tasks.  Yet, there are too many in the market for any one person to make sense of them in a short time.  To simplify matters, you only need to look at two versions of steel forks in order to start your personal collection of them..

Long-handled two-pronged steel kitchen forks are also known as pot forks or cook's forks.  They are mostly used for tasks such as removing a whole chicken from a deep pot or turning a roast in a baking pan. 


These strong steel forks with two steady tines are also necessary for holding meat firmly in place while it is carved for serving in individual slices. Smaller three-tined steel forks are called granny forks. 

They are ideal for gently swirling spaghetti while it cooks in the pot. 

You may also find its light touch useful when adding liquid to pastry or dough mixtures. 

If you are in a hurry to squeeze any lemon, lime or orange juices into your cooking pot, this type of steel forks are a good immediate substitute for a strainer. 

The seeds and most of the pulp from the citrus fruit will get caught by the tines and can be easily discarded.

Although the strongest steel forks should be made from unwelded metal, the best steel forks have a full tang riveted to a wooden or plastic handle. Such handles are good insulators and are necessary to protect your hand from the transferred heat of the hot food or cooking surfaces.  Steel forks for carving may also have a guard to protect the hand in case of accidental slipping.
