No kitchen can function without pots. Even the most reluctant cook has to have at least one small pot in the kitchen for boiling water, eggs or rice, or for reheating food on the stove.  However, with the dozens of variety of pots pushes out by manufacturers each year, how do we go about selecting a suitable pot for our use?

The first step of narrowing down the material of the pots is easy.  The most durable metal found in the kitchen, stainless steel will retain a polished finish throughout its long life and is completely impervious to acid or alkaline ingredients.


However, stainless steel in its pure form is not the best conductor for heat, which is an obvious enormous drawback in a pot. 

Thankfully, modern technology has found a solution.  Good-quality stainless steel pots now have heavy-gauge bases made of a sandwich of stainless steel with a metal filling that is a good conductor of heat. 

This filling may be copper, copper and silver alloy, or aluminum or an aluminum alloy. 

These types of stainless steel pots are may cost a little more, but they can last a long time.

Stainless steel pots are also easy to clean.  Just soak your pots to loosen any stuck-on food deposits, then clean with a brush and hot soapy water. 

If using stainless steel pots with a nonstick coating, scouring pads and powders should be avoided. 

Instead, wash your pots in warm soapy water using a sponge. With proper care, your stainless steel pots will stay good for years to come.

The second step is to examine what your cooking needs are. There is no point in buying a full set of stainless steel pots if you cook only occasionally for yourself, unless you are the type to cook all your meals in advance and store them in the freezer. 

If you like to cook a particular type of dish frequently, you might want to consider checking out any specialized stainless steel pots that are made for just that purpose.  For example, a pasta pot with its inset drainer will make cooking your spaghetti bolognaise a breeze.

The last step is to take a good honest look at your kitchen and see what kind of storage and usage space you have available.  It is easy to get carried away when we see our ideal cooking pot and pounce on it immediately, only to find that once we get home that it simply refuses to fit into any of our kitchen cabinets or racks. 

Sometimes, the pot will not even fit comfortably into the sink, making washing up a big problem. Take some basic measurements before you head out shopping, and you will save yourself plenty of grief later.  Of course, if you are the sort who likes to leave their pots on full display on the stove, then this would not cause any headaches for you.
